Just thought I'd make this fun little video since most of us are self isolating at home. I got really bored one day so I decided to shoot a video on how to make Taiwanese style. Dan bing, a type of Taiwanese style savory pancake, was one of the breakfast/brunch foods they would make because it was simple and filling (the proteins in the egg and pork floss and the carbs in the tortilla would provide them with energy to study—or play—for the rest of the day). While at the American diner, you would expect to find eggs, toast, bacon, hash brown, sausage, and pancakes, when you go to a classic Taiwanese breakfast vendor, you'd find a mix and match combination of shaobing, scallion omelette, youtiao (Chinese fried dough/stick), danbing, soymilk, etc.

Instructions to make Danbing (Taiwanese-Style Breakfast):
  1. Combine all the ingredients for the skin. Heat oil in a skillet, thinly spread a little less than a ladleful of batter and pan-fry it.
  2. Turn it over and pan-fry the other side. Take it out of the skillet and set it aside.
  3. In the same skillet, cook the beaten egg (you will prepare 1 serving at a time, so divide the amount of egg to cook).
  4. When the egg is half-way cooked, lay the skin from Step 2 on top.
  5. Turn it over and add your favorite toppings. (I don't have a photo for this…)
  6. Fold the edges and it's done!
  7. This one has green onions and cheese mixed in with the egg. The sauce is made with soy sauce and a hint of grated garlic.
  8. To make the batter thin, I use a scraper to spread the batter in the skillet just like making crepes.
