Mukimo Recipe: Mukimo is a meal whose origin is Central Kenya (Agikuyu community) but it's being served in hotels across the country keeping in mind of the diversity of Kenyan people. So if you have been wondering on how to prepare these meal at home,here is a simple recipe to guide you through. Sauté the onion and garlic in a large frying (sauté) pan until golden brown. Add the potatoes and a pinch of salt to the pan and cook for a few minutes.

The ingredients needed to make Mokimo:
- Make ready 1 kg potatoes
- Make ready 1 bunch pumpkin leaves
- Get 1 cup fresh maize
- Make ready 1 onion
- Get Cooking oil

Instructions to make Mokimo:
- Heat oil in a pot then add diced oniobs
- Fry the onions until golden brown then add the chopped pumpkin leaves
- Stir for one minute then add boiled fresh maize
- Stir then add chopped potatoes
- Stir then add a little water to cook the potatoes
- Mash the potatoes
- Serve with a stew of your choice and enjoy
