Githeri (Boiled Corn and Beans)- a traditional Kenyan one-pot meal dish made out of corn and beans flavored with curry powder and white pepper OR you can simply go with salt and pepper with this humble and easy vegan recipe. It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.
To begin with this particular recipe, we must first prepare a few ingredients. You can have githeri using 8 ingredients and 6 steps. Here is how you can achieve that.
The ingredients needed to make Githeri:
- Make ready Pre boiled mixture of kidney beans and green maize equal potions
- Get 1 large Red onion
- Take 4 cloves garlic
- Make ready 1 inch garlic
- Get 4 medium potatoes
- Prepare 2 tomatoes
- Make ready 4 tbsp oil
- Prepare 2 cups beef broth

Instructions to make Githeri:
- Fry onion till golden brown then add garlic and ginger
- Add tomatoes and set your heat to low and allow the tomatoes to cook and soften
- Add the potatoes and stir well and let it cook for 5 minutes
- Add your bean and maize mixture and stir well for another 5 min or until it starts to stick to the pot, add half cup of beef broth cover and let it cook
- When potatoes are almost cooked add the rest of the beef broth and simmer on low heat until the potatoes are done
- Enjoy it while hot. Add avocado and sprinkle some chibundiro mix
