The fruit is harvested green, carefully peeled, and then cooked and often mashed or pounded into a meal. If you use green bananas for this dish, make sure they are very green.

Instructions to make Matoke:
  1. Peel the banana,bananas and half them
  2. Grate carrot and zucchini. Chop onions and tomatoes
  3. Heat oil in a cooking pot and add the onions. Let it brown abit then add the crushed mixture, tomatoes, tomato paste,salt and spice of choice. Stir and cover to Cook for about 3 mins.
  4. Add meat and cook abit. Add the potatoes and keep stirring so that it does not burn
  5. After 5 mins of cooking, add the bananas and stir well. If too dry you can add some broth/water.
  6. Add like 3 cups of water and bring to boil on low heat.
  7. When done, store in the coriander. Serve hot.

Versions of matoke, also known as matooke, are served in Rwanda, Burundi and Tanzania. If you use green bananas for this dish, make sure they are very green. Lightly green bananas that you find in your typical supermarket won't work. So I picked up a new obsession after njahi, yay! So I'd just enjoyed plain mashed matoke with my sour minced meat stew (recipe in my profile) and there was some mashed matoke left over and me with my uber creative mind decided to add some stuff to it and shallow fry!
