- Make ready 3 cobs of maize + 1/2kg beans(boiled)
- Make ready 2 carrots(chopped)
- Get 1 onion(chopped)
- Make ready 2 cloves garlic
- Get 1 chilly cube
- Take 3 large tomatoes(chopped)
- Make ready 1/4 tsp garam masala
- Get 4 Irish potatoes (peeled)

Githeri is a Kenyan staple food consisting of beans and maize that are stewed with onions, tomatoes, and sometimes potatoes or meat chunks. The stew is often flavored with cumin, turmeric. Steps to make Githeri:
- In a pan fry onion + garlic till golden brown……add your peeled potatoes, + carrots…..stir..
- Now add your tomatoes, spices + salt……stir cover let them cook for about 10mins on an low medium heat….til the tomatoes are soft and well cooked……,.add your boiled githeri…..stir, (at this point you can add water for soup if you like)…..cover and let them cook well….
- Now serve with any accompaniment of your choice……I like mine with a cup of tea…….enjoy!
