- Get 1 tsp garlic chilli and ginger paste
- Get 2 stalks spring onion
- Prepare 1 tsp each salt and pepper
- Get 1 tsp each of soya sauce, red chilli sauce and vinegar
- Take 3 tsp oil
- Get 1 stalk lemon grass
Chinese fried rice includes chopped spring onions sprinkled on top, whilst Thai fried rice may prefer basil. Use the right oil to fry rice. Chinese fried rice prepared with freshly cooked rice has a softer texture, yet you can make the outer surface dryer by frying briefly with high heat. The rice is delicate inside and aromatic outside.
Steps to make Chinese fried rice:
- Wash Rice and Keep aside. Boil 350 ml water with salt and lemon grass stalk. Add rice and cook till dry.
- Heat a wok, add oil, chopped garlic. Let it brown a little add onion, followed by ginger chilli and garlic paste.Stir fry for 5minutes. Add chopped capsicums, carrots and mushrooms. Stir fry for another 5minutes. Add salt and pepper.Lower the heat and Cover and cook for 7minutes.
- Add parboiled rice and mix gently.
- Add chilli sauce, soya sauce and vinegar.
- Sprinkle spring onion stalks.
- Serve hot with chinese burnt garlic mushroom soup and carrot juliens/ strips
