Take a whole rainbow or brown trout then and drizzle with extra virgin rapeseed oil. Serve with the toasted peanuts, fresh lime, sliced papaya, microleaves and sliced baby cucumber. Arrange the potatoes, green beans, radishes, olives and trout on top. Pour any juices from the tomatoes into the dressing, then add the tomatoes to the plates.

- Add fillets to a hot pan with a little oil

- In a good processor, whizz up a good amount of oil, parsley and juice of a lemon. Add to trout and leave in fridge until ready to serve
- Add salad of choice, I used iceberg.
