- Peel and chop potatoes. Boil in salted water until soft. Mash with a knob of butter. Leave to cool in a big bowl. Prepare rest of ingredients. Drain mozzarella, and chop all ingredients
- Preheat oven to 180. Add everything into the mash adding eggs as last. Make sure you add a good amount of black pepper. Mix very well
- Grease a baking tray with butter. Sprinkle the tray with breadcrumbs. Add the potato mixture. Spread evenly. Top with more breadcrumbs and a few knobs of butter. Bake for about 35-40 minutes. Leave to rest for 15 minutes before serving
