I have replaced plain flour (maida) with whole wheat flour. Nimki is an all-time favourite Bengali jar snack, which has a very appetizing flavour and extremely interesting mouth-feel!
Instructions to make Atta Nimki:
- To prepare atta Nimki, you should prepare the atta dough by using water at first quantity wise and add few amount of black cumin seeds, olive oil, and a pinch of baking soda and salt to taste and smash it well, give it rest for 5 mins.
- After that, shape your Nimki by cutting the flatten dough with a sharp knife in some small size square shapes. Then start to fry it in a oily pan by pouring there enough oil to fry them deeply or you can do shallow fry. Look your Nimki are ready and as soon as Nimki will be done by changing colour of it's slightly brown, then off the oven and keep them aside in a bowl. Crispy Namkeen can be stored for few days.
