Instructions to make Nimki:
  1. Add plain flour, nigella seeds, ghee and salt in a mixing bowl. Mix well and knead into a tight and smooth dough using water as needed. Cover and set aside at least for 30 minutes.
  2. Meanwhile prepare a paste with 2 tsp plain flour and 2 tsp ghee. Keep aside.
  3. Divide the dough into 12 equal sized small balls. Roll out each ball into a thin circle. Spread the above prepared paste evenly over it.
  4. Fold it into half to form a semi-circle and apply the paste on it. Fold again to form a triangle. Roll it tightly to get multiple layers in nimki. Make similar nimkis with the rest of the dough.
  5. Heat oil in a pan. Deep fry the nimkis on a slow medium flame till they turn light golden brown from both sides.
  6. Cool completely and store in an air-tight container. These nimkis keep fresh for 15-20 days easily. Enjoy nimki as an evening tea time snack.
