Instructions to make Szechuan Broccoli:
  1. Firstly wash the broccoli very well and cut into small pieces.
  2. Next we will prepare the batter, in a bowl take wheat flour, cornflour, red chilli powder, turmeric powder, 1 tsp pepper powder and add salt as per taste.
  3. Mix all these dry ingredients and gradually add water to make thick batter.
  4. Dip the broccoli pieces into this batter and deep fry in hot oil until the outer coat turns nice crispy and lightly golden brown.
  5. Once the Broccolis are done keep them aside.
  6. Next in a pan take 2 tbsp oil, into this saute the garlic and onions on medium flame, after a minute add in the capsicum. Season them with salt and 1tsp of pepper.
  7. Once the onions start to turn translucent add in the vinegar and give a nice stir then pour in Scheshwan sauce, soya sauce and ketchup.
  8. Stir everything well and continue cooking on medium flame.
  9. Into this add the fried broccoli and toss them well so that each broccoli gets nice coat of Scheshwan sauce.
  10. Cook for two minutes finally garnish with coriander leaves.
