How to make Masala fried Brinjal step by step. Rub the salt and turmeric powder to the sliced brinjal. Add required amount of water to rest of the ingredients to make a batter like Dosa. Heat some oil in a pan.

Steps to make Shallow Fry Brinjal:
  1. Heat oil and add asafoetida, mustard and bengal gram, wait to splutter.
  2. Add brinjal (each cut into 4 pcs).
  3. Add turmeric, chilli powder, coriander and cumin powder and salt to taste.
  4. Add tamarind paste/amchur powder.
  5. Sprinkle water and close with a lid. Allow to cook for 5 mins and mix well 2-3 times.
  6. Before turning off the gas, add 1-2 tsp oil(coconut oil preferably).

Add required amount of water to rest of the ingredients to make a batter like Dosa. Heat some oil in a pan. Dip the marinated brinjal slices in batter. Shallow fry them on both the sides by covering the fry pan in medium flame. Heat a pan with sufficient oil to shallow fry brinjal.
