The ingredients needed to make Tofu Zhajiangmian (Chinese fried noodles):
- Take 1 serving Chinese noodles (fresh)
- Make ready 1 half a block Firm tofu
- Make ready 3 cm Finely chopped Japanese leek
- Prepare 1/2 piece each Garlic, minced ginger
- Get 1 Julienned cucumber, sesame oil, white part of scallions (optional)
- Make ready Combined Seasonings
- Make ready 1 tsp Toubanjiang
- Take 1 heaped tablespoon Tianmianjiang
- Make ready 1 tbsp Sake
- Take 1 dash of each Salt and pepper
Pan-crisping the noodles here mimics the crunch of the traditional dish, but limits the saturated fat. Look for Chinese noodles or lo mein noodles in the Asian or international aisle of major grocery stores. Add the tofu cubes in a single layer and fry until golden brown on all sides. Add the drained noodles along with the reserved sauce and tofu.
Instructions to make Tofu Zhajiangmian (Chinese fried noodles):
- Thoroughly drain the tofu (If you wrap the tofu in a paper towel and microwave for 2 minutes at 500 W, the water drain off easily).
- Heat sesame oil in the frying pan and saute the Japanese leek, garlic, and ginger.
- When it becomes fragrant, crumble the tofu and add it to the pan. Use a spatula to further break apart the tofu while cooking.
- Add in the combined seasonings and stir until the flavors meld.
- Boil the chinese noodles, drain and rinse. Arrange on a plate.
- Top with cucumber and the cooked tofu and arrange the julienned scallions on top.
Add the tofu cubes in a single layer and fry until golden brown on all sides. Add the drained noodles along with the reserved sauce and tofu. Zha Jiang Mian (炸酱面), or Fried Sauce Noodles is so famous in China that the mere mention of it makes people think of Beijing.
