Instructions to make Nimki:
  1. Mix 2 tbsp oil in flour.Sprinkle baking powder,salt,pinch of sugar,ajwain,kalonji and mix all.Add water to knead it and make a tight dough.Cover and set aside for 10 minutes.
  2. Divide dough into lemon sized balls.Roll into thin round discs.Make a paste of ghee and little flour.Smear little paste in the disc and fold into half.Smear ghee paste again and fold into triangle.Press lightly.Prick the surface with a knife so that folds don't open.
  3. Heat oil and fry nimkis in low flame till crispy and brown in colour.Cool and store in airtight container.Serve as a snack with evening tea.
